
威士忌 whisky 香味濃郁,混入bbq 醬當中,令醬汁帶有獨特的香氣,層次感更強。
食譜內的份量可製作出1杯份量的威士忌BBQ醬,可用作烤全雞或烤 baby back ribs的醬料。
食譜最後塗抹的技巧是來自水牛城雞翼,製作 rich flavour 的醬汁coating 不需要高超的技巧,只需要耐性。
威士忌BBQ醬烤雞翼
材料
- 威士忌BBQ醬 (1杯份量)
- 蕃茄醬 ketchup 半杯
- 威士忌 whisky 半杯
- 蜜糖 1/4杯
- 白醋 1/4杯
- 喼汁 1湯匙
- 檸檬汁 2湯匙
- 豉油 1湯匙
- 芥末 1茶匙
- 蒜 1瓣 (切成碎粒)
- 雞翼醃料
- 鹽 少許
- 甜椒粉 paprika 少許
- 孜然粉 ground cumin 少許
- 雞翼 6隻
步驟
- 把威士忌BBQ醬的材料倒入小鍋中,慢慢加熱,令醬汁變得濃稠。一定要間中攪拌!
- 當黏度合適時,試試酸甜度是否平衡。
- 將煮好的BBQ醬倒出,讓它冷卻下來。如想加強酒氣,可以待涼後加入少許威士忌並拌勻。
- 醃雞翼的方法十分簡單。洗淨抹乾,加入鹽、甜椒粉及孜然粉醃30分鐘。
- 烤焗時,先以180C焗5分鐘,然後反轉焗多5分鐘。
- 這個時候,雞翼應該熟了大半。在雞翼表面抹上威士忌BBQ醬,以200C 焗 2-3 分鐘,反覆這個過程數次,就得到豐厚醬汁的雞翼。
Baked Chicken Wings with Whisky BBQ Sauce
Ingredients
- Whisky BBQ Sauce
- 1/2 cup ketchup
- 1/2 cup whisky
- 1/4 cup honey
- 1/4 cup white vinegar
- 1 tablespoon Worcester sauce
- 2 tablespoon lemon juice
- 1 tablespoon soy sauce
- 1 teaspoon mustard
- 1 garlic glove (peeled & chopped)
- Chicken wings seasoning
- little salt
- little paprika
- little ground cumin
- 6 chicken wings
Methods
- Put all BBQ sauce ingredients into a saucepan. Medium heat to simmer. Remember to stir.
- When the sauce becomes thick, taste the sauce and adjust the balance of sour and sweet.
- Pour the sauce into a bowl. Let it cool down. If you like to have a stronger taste of whisky, pour little whisky into the sauce when it is not hot.
- Add salt, paprika, ground cumin to season the chicken wings. Leave them about 30 mins.
- First, for each side, bake the chicken wings for 5 mins (180C). Then, paint the sauce on top of the chicken wings and bake for 2 mins (200C). Repeat this process several times. Chicken wings have rich bbq sauce coating on top. Done.
