
老婆很喜歡我家附近一間小店的拍青瓜。我見材料看似簡單就憑著吃過的味道製作。事實上,我試驗了數次及搜尋多個食譜才算成功地製作出這款惹味的拍青瓜。
經驗分享: 花椒油是不可缺的 (只是十數元),它的香氣獨特,而且後勁較強,數分鐘過後口腔依然留有其味道。採用更大量的蒜頭令菜式更有層次。甘荀絲加添了菜式的顏色及口感。
惹味拍青瓜 (2人份量)
材料
- 青瓜 1大條 [有很多尖刺狀的較爽脆]
- 甘荀 1小條 [去皮、切成幼絲]
- 花椒油 2茶匙
- 麻油 2茶匙
- 魚露 3茶匙
- 豉油 1/2茶匙 [建議用頭抽]
- 白砂糖 1/3茶匙
- 蒜頭 3瓣 [去皮切碎]
步驟
- 將青瓜洗淨,保留外皮。
- 把青瓜切成兩半(縱向),用鐵匙將內部的籽除去。並將青瓜切條。
- 準備一個食物膠袋/密實袋,放入青瓜條並密封,用刀身拍打。如發現青瓜的裂紋不多,可用更重的器具(刀柄)打擊數下。
- 準備一個小碗,放入其他的醬料、糖及蒜粒,拌勻。
- 把醬料、青瓜及甘荀絲拌勻,醃一會兒,味道會更好。
Asian Style Cucumber Salad
Ingredient
- 1 large cucumber (prefer with spiky skin. They are crunchy)
- 1 small carrot (peeled and cut into thin strips)
- 2 teaspoons of peppercorn spicy oil
- 2 teaspoons of sesame oil
- 3 teaspoons of fish sauce
- 1/2 teaspoon of soy sauce
- 1/3 teaspoon of sugar
- 3 garlic gloves (chopped)
Procedure
- Wash the cucumber. Dont peel.
- Cut the cucumber lengthwise. Remove the seeds inside. Then cut into small strips.
- Prepare a plastic bag. Put the cucumber strips inside the bag. Hit with one side of knife. There should be some cracks.
- Mix the sauces, sugar and garlic in a small bowl.
- Stir the cucumber with the mixed sauce and carrot. Done.
