煎三文魚配忌廉檸檬汁 Pan-fried Salmon with Creamy Lemon Sauce

煎三文魚配上清新的醬汁,簡單又美味,15分鐘便可以完成! 除了檸檬汁,檸檬屑能令香氣及清爽感進一步提升。忌廉的作用是令感覺更順滑,不太強烈及剌激。

材料

步驟

  1. 準備醬汁: 把檸檬屑及檸檬汁倒在小鍋中,加入忌廉。開中小火,慢慢加熱及拌勻,令忌廉及檸檬汁混合。
  2. 把已煮的醬汁倒在小碗中放涼。
  3. 洗淨並抹乾三文魚柳。撒上少許鹽調味。
  4. 用中高火煎香三文魚柳。技巧: 魚皮向下。煎香魚皮的同時,魚肉的顏色會開始變白。當8成的顏色已改變,可以把魚柳翻轉。翻轉後煎的時間會較之前少得多,時間約1-2分鐘。另外,如魚柳較厚,可側面轉動,煎香餘下的兩面魚肉。
  5. 將早前已準備的醬汁淋在魚柳上,完成。

  1. Prepare creamy and lemon sauce: Add lemon zest and lemon juice into a sauce pan. Pour whipping cream. Gently heat the mixture and stir. Lemon juice and cream starts to combine.
  2. Pour the sauce into a small bowl and cool.
  3. Wash the salmon fillet and dry it with towel. Add some salt on it.
  4. Heat the pan. Lay down the fillet. Skin side down. As the 80% of fillet changes the color, flip the fillet and fry for 1-2 minutes. If the salmon fillet is too thick, fry the remaining 2 sides.
  5. Pour the prepared sauce on the salmon fillet. Done.
